• Distillery: Eigashima Shuzo (White Oak Distillery), Hyōgo Prefecture, Japan 

• Mash Bill / Style: 100% lightly peated barley distilled in copper pot stills 

• Ageing Process: Aged 4 years in ex-bourbon barrels, then finished for 1 year in ex-Kijoshu sake casks (American oak)

• ABV: 50% (100 proof)

• Nose (Aroma): Candied orange, almond butter, sake lees (a rich, creamy sake sediment aroma)

• Palate (Taste): Saltwater taffy, cocoa, subtle sweetness infused by the sake cask, some nutty richness (walnut), and interplay of sweetness and a light savory / umami character

• Finish: Drying notes: black tea tannin, fresh cypress, leather, soft spice; lingering umami from the sake influence
